For many kefir fans, the kefir on the cooling shelf is too mild or too low in carbon dioxide. This is because special kefir grains are used for mass production, which have a longer shelf life. Critics are of the opinion that this also leaves some of the valuable ingredients in kefir by the wayside. They therefore swear by homemade kefir.

If you want to make kefir yourself, you don’t need any special ingredients apart from the kefir mushroom. You can buy such a kefir grain in local health food stores or order it online. If you know someone who makes kefir themselves, they will surely give you a piece of their kefir grain as well. The culture grows with each start.

Add the kefir mushroom to the milk and wait

The actual production of kefir is very simple: Put about a teaspoonful of yeast in a tightly closable vessel with a large opening; Yoghurt jars are well suited. The finished kefir drink can be kept in the refrigerator for about two days.

There are two types of pancakes in Russian cuisine: oladji are round and thick, and are similar to American pancakes. Blinis are thin and are rolled or folded, with or without filling, like French crepe. Try the following recipe for blinis with kefir. You need the following ingredients:

3 cups of kefir, 2 cups of flour, 1 cup of water, 2 eggs, 3 tablespoons of sugar, 1 teaspoon of salt, 1 teaspoon of baking powder, 3 tablespoons of oil


In a large bowl, mix the eggs, flour, baking powder, sugar, salt, oil, and a cup of kefir with a whisk until a smooth batter is formed without lumps. Let the dough rise for half an hour. After a while, small bubbles should form on the surface of the dough.

Heat a coated pan with oil on the stove over medium heat. Then you can start: Put three-quarters of a cup of batter into the pan for each blini and make sure that it runs well on all sides so that the pancake is nice and thin. After two to three minutes – if the batter looks dry – turn the pancake and fry the other side for two to three minutes.

Repeat the process until the batter is used up. Depending on the size of your pan, you should end up with between eight and ten blinis.

Kefir muesli with acerola

With kefir instead of milk, muesli becomes even healthier and fresher. A real power muesli for two people can be prepared from the following ingredients:
